Blueberry Baked Oatmeal

So to start, I have here a recipe for a simple baked oatmeal. It is great as a snack or a quick breakfast. I like giving it to my son in the morning and putting it in my bag for my drive to work when I don't have time to eat anything before heading out. It makes me feel good that me and my son had some real whole grains in the morning without any added unknown ingredients such as in breakfast cereals and ready-made cakes. Enjoy :-)


Blueberry Baked Oatmeal


Blueberry Baked Oatmeal

Tools:

1 cup, 1/2 cup and 1/4 cup measuring cups.

1 tablespoon measuring spoon

2 medium sized bowls

9x9 inch baking pan

whisk

Ingredients:

2 cups oats - For better texture I used 1 cup coarse oats and 1 cup quick cooking oats

1/4 cup spelt flour or regular flour will work well too

1 tsp baking powder

1 tsp cinnamon

1/2 tsp salt

1 egg

1/2 cup blueberries (1 cup chopped apple or mashed banana works well too)

2 tbsp almond butter (may also use peanut butter

1 cup milk

Directions:

1. Preheat oven to 175 C (350 F)

2. Mix together the dry ingredients - oats, spelt flour, baking powder, cinnamon, salt

3. Mix together the rest of the ingredients - eggs, banana, almond butter, and milk.

4. Add the wet ingredients to the dry ingredients.

5. pour into prepared pan and sprinkle with blueberries.

6. Bake for 30-40 minutes until it has set and is golden brown.


This picture was taken when Eitan was 11 months old. But we still enjoy baked oatmeal with different variations.
